Why are burgers in France so good

I’m relaxing by the pool on the Atlantic Coast and thinking of burgers, in particular all the great ones I’ve had here in France over the years.

Whilst I love traditional French cuisine, at lunch this week in Saint Palais Sur Mer I was reminded how many great burgers I’ve had here over the last 15 years. 

French burgers are fabulous! Who knew the land of escargots and croissants had a soft spot for juicy patties and crispy frites? Anyone who says they’re not French are kidding themselves, the importance of produce from the region you’re visiting are often highlighted, for example with Limousin beef, and of course produce from the local region and smile, cheese! 

I’ve discovered that the French take their burgers very seriously. The beef is often ground only once to retain a bit of coarseness, which is perfect when cooked to a lovely medium rare or medium doneness. And don’t even get me started on the cheese – Raclette and Comté are my best friends when it comes to French burgers. 

I had a Wagyu burger with Comté cheese at Saint Palais Sur Mer this week that was so good. The combination of the rich Wagyu beef and the nutty Comté cheese was absolute perfection.

And let’s not forget the frites – oh, the glorious frites! Freshly cooked in a deep fryer, they’re the perfect accompaniment to any burger. I’ve even invested in a frites machine at the farmhouse, because why not?
