Superfood Stir-fry

img_2192I know Kale has been on its comeback now for a few years but I still love it. It has such a balanced flavour that it goes with most things. I love stir fried kale with omelettes or as a side to a delicious eye fillet steak.

I’ve just whipped up a quick stir-fry. There is no trick to this, it’s pretty much whatever vegeatables you have at home, and I also added 250 grams of red quinoa, – great rice substitute. Tonight I used:

  • Brocolini (blanched)
  • Snap peas (blanched)
  • Carrot (blanched)
  • Kale
  • Green Capsicum
  • Red quinoa

A swirl of olive oil in a hot pan, add your ingredients and a little salt and pepper and you’re on your way. Remember not to overcook of course. A little crunch goes a long way to a healthy meal.

We absolutely are what we eat. I need to remember that more often 😉
